tonight I made lemon drizzle cake
100g butter, softened
175g caster sugar
2 eggs
175 self raising flour, sifted
4 tablespoons milk
zest of one lemon
For the drizzle icing
juice of 1.5 lemons
few teaspoons caster sugar
1) preheat oven to gas 5.Grease and line 2lb loaf tin with greaseproof paper. Beat together butter and sugar until light and fluffy. Gradually beat in each egg one at a time, add the milk . Stir in flour then lemon zest. Pour into tin
2) Bake for 50 - 60 min min. Mix icing ingredients together and heat in a pan . While cake is still warm prick with a fork and pour the cooled over cake. Leave in tin until cool.
if you like your cake sweeter , use more sugar in the icing . I make it sharp and lemony.
